Traditional Miso Shop Styled Cedar Koji Tray/Koji Buta

From the traditional farmhouse to the modern miso factory, the cedar koji tray lives on. These tight fitting mortise and tenon joints of these trays allows for all wood construction with no need for glues or metal. I use well sourced cedar that is free of chemicals.

I find that wooden trays soak up any excess moisture instead of the pooling that happens with non-permeable containers. The insulative value of the the wood helps in keeping a stable temperature. While developing a patina through use and with moving from the cycles of humidity and drying, these trays will last you a lifetime.

These trays are larger than the farmhouse trays with internal dimensions of 16.5x11x2 inches. If you are trying to produce koji for frequent use or in quantity, and have a muro or are considering one, these are definitely the tray size you want. If you are going to be using your tray in a bread proofer or something in a small space, you might consider the farmhouse size.
