Koji Muro - Koji Incubation Chamber

from 1,750.00

A muro is an incubation chamber for maintaining a proper koji enviroment. The muro comes with temperature and heat microcomputer controls, as well as heat and humidity sources. Cedar is the ideal wood for a muro for a number of reasons. One, cedar can be used untreated which allows for it to absorb any moisture that would condense in the muro. There is no standing water then. The cedar is naturally rot resistant so can take the moisture without compromising the longevity of the cabinet. The cedar can stand well to the heat and humidity changes from the cycles of use and disuse. The cedar will patina well over time.

The cabinet is built using mostly mortise and tenon as well as dovetail construction. The lack of iron (potentially corroding) fasteners and hardware inside the muro will help with the muro lasting a lifetime. There are gaps built into the muro for allowing the expansion of wood with the increase of humidity when the muro is in use.

The muro is built to order. I can work with your space needs to design a muro for you. Once we have details figured out, you will be put in the queue. The build can take some time, and I will be able to give you an approximate finishing time, when figuring out details.
