Japanese Farmhouse Styled Cedar Koji Tray/Koji Buta

Inspired by traditional Japanese farmhouse koji tray design, these trays are handmade and are free of metals and glues. The use of koji trays is standard from home production through to industrial production. There is a relatively standard size for koji trays which informed the sizing for mine being 18"x13"x2.5" (internal dimensions of 14"x10"x2"). Koji (Aspergillus oryzae) is grown on grains or beans to assist in the fermentation of miso, sake, mirin, soy sauce, shoyu, tamari, pickles, and many more. The tray are used during the incubation period. The wood insulates and helps maintain the proper temperature.
